Oh yes I am getting craft in the kitchen now…How about a Tuna melt…No Mayo, No Cheese (and ten times more delicious!!!)
Try them…I asure you they are good!
Note: I didn’t use any cheese in this recipe as I try to limit my dairy intake, but if its your thing, feel free to add some on top and stick under the broiler!
Mexican Tuna Melts
1 Ezekiel English Muffin
1/2 Can of Tuna (packed in water and salt free)
1 Tbsp Hummus
2 Tbsp Salsa (organic prefered)
1 Tbsp Nutritional Yeast (can be found at your local health food store..gives a cheesy flavor!)
1 tsp Cumin
Mix together the tuna, hummus, salsa, nutritional yeast, and cumin in a bowl. Meanwhile toast your english muffin. When you have a good brown color on the english muffin, top it with your tuna mixture and alfalfa sprouts on top!
