What’s In My Morning Cup!?

Happy Memorial Day!

I can’t believe it’s that time of year again!!   Hope everyone has had a great long weekend!  Mine has been pretty low-key involving lots of hikes, friends and yoga!  I also shot in the desert yesterday which was very fun!

Please don’t be fooled by the word desert however…it was FREEEEEZING!!!   The winds were so strong that we could feel the BIG jeep we were driving out in being swayed!  It was crazy…and didnt help that the wardrobe was pretty minimal 😉  Haha, oh well, I guess beauty is pain….right!?

Once I get some pictures back I will be sure to share a couple…they should be really neat!!

Aside from having the professional photographers on ‘set,’ my extremely talented friend (and fellow model) brought her camera along too!  We had fun goofing around and testing the lighting when we weren’t actually working!  Here’s one of the shots she took:

Anyways…I wanted to share my latest new morning obsession!

“Creamy” Peppermint Tea!

I became hooked on peppermint tea earlier this month while visiting with my aunt in Northern California.  Once we had tried it, the two of us couldn’t get enough! haha.

I never thought to add anything to it however, because I was never a milk in my tea kind of girl.  It wasn’t until a very good friend of mine took me to an amazing little coffee shop in Topanga Canyon.  He always orders his tea to be made with hot steamed milk, but since I shy away from dairy I was going to have mine plain.  That is, until I leaned that they had a wide variety of milks to choose from including Hemp and Almond!

The tea I had that day was amazing!! Super yummy and right up my alley!  So why not try to recreate the experience at home?

Its super simple and I’m looking forward to experimenting with some different flavored teas!!

But as of now im making my “Creamy” Peppermint Tea 

1 Peppermint Tea Bag

Boiling Water

2 Drops of Liquid Stevia

Splash or Two of Unsweetened Vanilla Almond Milk

Prepare the tea as you normally would and add the UVAM and Stevia (to your liking)

Its simply scrumdiddlyumptious, and you will just HAVE to try it!!

This post is WAY overdue!!!

Earlier this year, the WONDERFUL people over at Larabar offered to send me some samples…and I happily accepted!!  Who doesn’t love getting free stuff!?

Well…I devoured them all during the time that I wasnt blogging as much and totally forget to write a review…my B!!!

I LOVE Larabars!!  Always have and always will!! They are a great snack to keep in your purse while you are on the run!  I especially like to take one with me to shoots because you never know if there will be healthy options on set!  (I have never understood why some clients will serve greasy foods like pizza and cookies…and then expect you to fit into that dress or bikini after lunch…DUH!! haha)

I’m actually shooting out in the California desert today…and guess whats in my bag!?  Apple Pie to be exact!  (getting all fancy on you now!)

Anyways…this is the beautiful package they sent to me complete with a great sampler, t-shirt and canvas bag!

I loved all the flavors!!

Still to this day however I have a soft spot in my heart for coconut cream pie and chocolate chip cookie dough!!

The great thing about Larabars is that they are raw and vegan!  So although they are high in sugar, its natural sugar that your body understands!


Keep some on hand and you will never be stuck grabbing something from a scary vending machine!!

Best Hike EVER!!

This morning was amazing…I think I have found my favorite hike in LA!

One of my nearest and dearest friends, Laurel and I decided to venture over to the west side (where I’ll be moving this week!! eeek!) to check out a new hike!  We had seen pictures and heard great reviews so we figured…what do we have to lose!?

There is nothing better than having an amazing friend who has so many similar interests as you!   Laurel and I are constantly on a mission to stay active and try new things…but our number one love is hiking!!  (You should see us attempting to get better at tennis!!  Its a good thing we both have a sense of humor!)  Time flies when we are together!!  This morning’s hike took about 2 1/2 hours and yet time just flew by!!  (Kind of like the day we were gabbing and hiking, gabbing and hiking…got lost, and over 3 hours later made it back to our cars! WOOOPS)

Please, if you are in the LA area…lace up your hiking boots and get your camel pack ready 😉  because Topanga Canyon is where it’s at!!  We chose to hike the Los Liones trail and were not disappointed!!

The beginning of the trail is very narrow and winds through tree covered paths sprinkled with wild flowers!  At times I felt like I was in a story book about an enchanted forest…and then Id trip on one of the magical stumps and snapped back into reality!!

Once you reach the fire road the trail widens up a bit and that’s when the amazing views don’t stop coming!! The whole time your twist and turn around this mountain with straight shot views of the ocean!  Point blank…ITS AMAZING!!  (Im going to try and get better about carying a camera with me where ever I go…so I can start making this blog pretty with pictures!!)

I think we have found our Saturday morning hike!

Wholly Guacamole This Salad is AMAZING!!!

Hi GUYS!!!

So yes, once again it has been a million years since I have posted…but Im back so I think that’s all that matters!!

And guess what…Ive changed locations once again!!  Greetings from LA!!!

Tonight I was feeling like I needed some extra greens in my life, and since I had picked up some beautiful Kale and Chard from the farmers market the other day…I was ready to experiment!  WHOLLY GUACAMOLE…I’m so glad I mowed this down alone, because I totally licked the bowl clean 😉


Wholly Amazing Kale Salad 

(2-3 servings)

1 Bunch Dinosaur Kale

1 Bunch Rainbow Swiss Chard

Large Handful of Cilantro Chopped

1/4 Large Red Onion (or 1/2 Small) Chopped

1 C Heirloom Cherry Tomatos

3/4 Very Ripe Avocado

1 Lime

Sprinkle of Sea Salt

3 Tbsp Nutritional Yeast 

Chop the heads of Kale and Chard into bite size pieces.  In a large bowl toss the Kale, Chard, Cilantro, Red Onion and Tomatoes.  Scoop the avocado into the bowl, squeeze the lime over everything and sprinkle the sea salt and Nutritional Yeast on top!  Now for the dirty work…get your hands dirty and massage everything together!  The more you work it with your hands, the more tender the kale will become!


WOW, your body will thank you after you munch on this for din din!!

Cold Weather Calls for Soup!

It’s no secret I am no longer in Miami…

Although I love being home with my family, this cold weather is not really my thing!

Most people think I’m crazy when I complain about even 50 degree weather being cold…”Aren’t you from NH…you should be used to the cold!”

But alas…if you know me well…you know that I was clearly not born in the correct state!  I should have been a little beach baby, running around in the heat and frolicking in the sand!  Instead, I was raised in New England where snow days were a regular occurence, and the sun only shines 6 months out of the year!

Now that I am home for a few weeks I am bundled from head to toe 24/7 and so naturally the other night I decided soup was in order!

The day after I got home I did my typical grocery run (when I come home with loads of “healthy stuff” and my brother fears for what I will be concocting for dinner!).  While out, I bought the most BEAUTIFUL bunch of Kale, which would turn into the perfect star ingredient in my veggie soup!  Kale is so good for you and fills your body with lots of wonderful vitamins and minerals!!  Maybe we shall call this Happy Body Veggie Soup!

Happy Body Veggie Soup  🙂

1 Large Onion

3 Large Cloves of Garlic Minced

2 TBS Extra Virgin Olive Oil

1 Handful Sage

6 Spears Rosemary

3 Bay Leaves

1 TBS Red Pepper Flakes

1 1/2 Containers Organic Low Sodium Vegetable Broth

1 Small Can Organic Italian Style Diced Tomatoes

1 Large Can Organic Peeled Plum Tomatoes

3 Large Carrots Chopped

1 Head Broccoli Diced (I use the stem as well!)

1 Large Bunch Kale Cut into pieces

1 Can Cannellini Beans (rinsed thoroughly)

1 Can Red Kidney Beans (rinsed thoroughly)


Start by chopping the onion into bite sized pieced.  Add the Onion to a large soup pot with the 2 TBS of EVOO and the minced garlic.  Saute the ingredients until the onion begins to sweat.  At this point add in the rosemary, sage, bay leaves and red pepper flakes.  Cook a little longer until the onion is translucent, add the vegetable broth and tomatoes.  Stir the pot and start to bring to a boil.  Nows the time to add in your veggies (carrots, broccoli and kale!).  Once the soup comes to a boil, reduce to a simmer and cook for about 15 minutes (or until your vegetables are the desired texture).   After simmering for 15 min, stir in your beans, remove from heat and cover.

Before serving your soup make sure to remove the bay leaves and rosemary twigs.  It’s also a good idea to taste your soup and decided whether or not it needs a dash of sea salt.   I added a miniscule amount because the flavors of the herbs was so strong!

Ladle into a BIG soup bowl and ENJOY!!



I enjoyed this soup after a strenuous Bikram yoga class the other night!  It was perfect to be able to come home to a hardy meal like this!  (I forgot how hungry Bikram makes me)

Now, I will warn that this soup isn’t for the faint of heart!  I made this in hopes of wowing my family with a delicious, warm home cooked meal when they arrived home for the evening…

I think the boys were fishing for meat and starches…No beef…No noodles…”you call this soup!?”  Hahah…one day I will convince them that they don’t need to have meat at every meal!


And PS:  it’s even more delicious day 2!!


If your living somewhere cold (All my Miami friends can disregard!) make this soup tonight!!

Mexican Tuna Melt…Hold the Cheese!

Oh yes I am getting craft in the kitchen now…How about a Tuna melt…No Mayo, No Cheese (and ten times more delicious!!!)

Try them…I asure you they are good!

Note:  I didn’t use any cheese in this recipe as I try to limit my dairy intake, but if its your thing, feel free to add some on top and stick under the broiler!

Mexican Tuna Melts

1 Ezekiel English Muffin

1/2 Can of Tuna (packed in water and salt free)

1 Tbsp Hummus

2 Tbsp Salsa (organic prefered)

1 Tbsp Nutritional Yeast (can be found at your local health food a cheesy flavor!)

1 tsp Cumin

1/5 Avocado

Alfalfa Sprouts


Mix together the tuna, hummus, salsa, nutritional yeast, and cumin in a bowl.  Meanwhile toast your english muffin.  When you have a good brown color on the english muffin, top it with your tuna mixture and alfalfa sprouts on top!

MMMMMMMMM….A healthy take on an old classic!!

I’m Home…and Getting Crafty in the Kitchen!

Oh boy its been a while since I’ve posted on here!

I had a ball this winter in Miami and barely found time to stop long enough to think of something interesting to write 😉

Sometimes when I’m living on my own I find myself getting into a food rut…If it ain’t broke, don’t fix it!  Hahahaha

Many dinners consisted of hummus and veggies or avocado sammies!  Although I love eating these…I dont think it makes for very interesting content!

Well…Now Im home with my family in NH!!  Although I miss the BEAUTIFUL Florida sunshine…its been nice to get a full dose of fresh New England air!  Today we have the windows and doors open and I can see some flowers trying to peek through the ground!

I love being home with my family because it means I can get crafty in the kitchen!  Although the boys aren’t always so keen on trying my healthier dishes…I do spoil them with some comfort favorites!  Last night dad put in a request for homemade mac and cheese with peas!  (Oh the simple things that make them so happy!)

Normally mac and cheese wouldn’t be something I would make for myself (especially since I try to avoid dairy), I am a strong believer in not pushing my ideas on others (I simple suggest and inform!)  I gladly made up a batch…but was sure to use all organic dairy products to ensure it was as “healthy” as it could be 😉

For Mom and I, I whipped up something quick and easy that was both healthy and delicious!  It was a quick quinoa and black bean salad…but mom couldn’t stop talking about it!  (Shes just so cute!)

so here it is…

Quinoa and Black Bean Fiesta!!

1 C Quinoa

2C Low Sodium Vegetable Broth

1 C Black Beans

1 C Cherry Tomatoes

1 Red Bell Pepper

1/4 C chopped Green Onion

1/4 C Red Onion

Large Handful Cilantro


Juice of 2 Limes

1/3 C Olive Oil

1 Large Garlic Clove diced

Sea Salt


Boil the quinoa in the vegetable broth until all the liquid is evaporated.  Chop the vegetables and mix all together with the quinoa.  Wisk the dressing ingredients together in a separate bowl and add to the vegetable mixture.


It’s as simple as that!!  We enjoyed it on its own, but you could also add a scoop to a bed of lettuce!  This salad is even better the next day after it has sat in the dressing for a while!

…So I can’t wait for lunch today!
